
Smashed Broad Bean with Mint
This makes a nice dip if you loosen it with a little water, or try spreading onto toasted ciabatta, bruschetta style, and topping with crumbled feta cheese. Also good as part of a flat bread pile up!
Ingredients
- 2 handfuls cooked broad beans, podded & shelled
- 1 spring onion, finely sliced
- Juice & zest of quarter lemon
- 1 small clove garlic, crushed
- Half tbsp olive oil
- Pinch sea salt
- 1 tbsp chopped mint leaves
Method
- Use a fork to mash the broad beans in a bowl
- Mix in the other ingredients
- Loosen with water until you get the consistency you would like
Top tips
You could mix in some feta cheese instead of water, to make it more of a spread
