Smashed Broad Bean with Mint

This makes a nice dip if you loosen it with a little water, or try spreading onto toasted ciabatta, bruschetta style, and topping with crumbled feta cheese. Also good as part of a flat bread pile up!

Ingredients

  • 2 handfuls cooked broad beans, podded & shelled
  • 1 spring onion, finely sliced
  • Juice & zest of quarter lemon
  • 1 small clove garlic, crushed
  • Half tbsp olive oil
  • Pinch sea salt
  • 1 tbsp chopped mint leaves

Method

  1. Use a fork to mash the broad beans in a bowl
  2. Mix in the other ingredients
  3. Loosen with water until you get the consistency you would like

Top tips

You could mix in some feta cheese instead of water, to make it more of a spread
