Cucumber & Herb Summer Salad

If you find yourself with a glut of cucumbers, this is a great way to use them in salads. It also makes a good side to jacket potato lunches, and can be piled into flat breads and wraps or with BBQs.


  • 1 cucumber, diced into 1cm pieces
  • 2 spring onions, finely sliced
  • Handful of mixed parsley and chives, chopped (keep the chive flowers for garnish)
  • 1 tbsp olive oil
  • Half tbsp cider vinegar
  • Sea salt & peppet


  1. Mix the ingredients well in a bowl, making sure the cucumber get well coated with the dressing
  2. Serve in a bowl, sprinkled with chive flowers as a garnish

Top tips

Swap the chives and parsley for other herbs that you have – dill, fennel, mint all would work well too
