Slow Roasted Cherry Tomatoes

This is a handy way to cook up a small glut of cherry tomatoes. You can serve them as a side or filler for sandwiches, jackets and so on, or mix them in with pasta dishes.


  • 10-12 cherry tomatoes, halved
  • 1-2tbsp olive oil
  • sea salt & pepper
  • 1 tbsp basil leaves, chopped
  • 1 tsp balsamic vinegar to drizzle


  1. Place the tomato halves in a roasting dish and drizzle generously with 1-2tbsp olive oil
  2. Season well with sea salt and black pepper
  3. Add a small drizzle of balsamic vinegar (approx 1 tsp)
  4. Roast for 1 hour at 140c
  5. Remove from the oven and sprinkle over freshly chopped basil
