Tzatziki is an excellent way of using a glut of cucumbers or courgettes. You can play around with it a little, trying different herbs – Mint is the classic, and you can try using different types, like Chocolate Mint and Ginger Mint, and Vietnamese Coriander works really well too.
Add more herbs for more flavour, or a smaller amount for a more cooling tzatziki.
Tzatziki can go quite watery, so it is best made just before you are going to serve it.
