Roast Potato, Garlic and Wild Rocket Salad

For an easy lunch, try this roast potato salad with garlic, wild rocket and pumpkin seeds. You could easily throw in some grilled halloumi at the end, or serve with a poached egg. A good similar dish in early spring would be to roast potatoes and then throw in some wild garlic leaves with the rocket.

Ingredients:

  • 500g potatoes, cut into chunks
  • 1 bulb garlic, broken into cloves (keep skin on)
  • 1-2 handfuls wild rocket leaves
  • 1 tbsp pumpkin seeds (toasted)
  • Drizzle balsamic vinegar

Method:

  • Preheat the oven to 200c
  • Toss potatoes in oil and salt and the whole garlic cloves
  • Roast for 40 minutes or until cooked
  • Mix potatoes with the wild rocket while hot so that the rocket wilts a little
  • Peel cloves/squeeze out the garlic and mix in together with the salad
  • Drizzle with balsamic vinegar to serve
