A Christmas Slaw

This is a good, healthy side dish that you can whip up at any time over Christmas.

You will need:

  • Red Cabbage, finely sliced
  • Parsnip and/or Celeriac, peeled & grated
  • Carrot, peeled & grated
  • Cauliflower florets
  • Apple, peeled & grated
  • Chopped walnuts
  • Stilton, crumbled
  • Lemon juice (a splash)
  • Oil (a splash)
  • White wine vinegar (a splash)
  • 1 tsp mustard (optional)
  • Dried cranberries (handful)

Just mix the whole lot up together. The quantities are up to you, and don’t feel like you need to stick to the exact ingredients listed. You can make it up as you go along, just make sure you check the seasoning and add more lemon/vinegar as you need.
