Cut the peeled potatoes into wedges and drop them into salted boiling water (we like to use our sea salt crystals) and cook until slightly soft. Or if you’re feeling super lazy, oven chips would work fine!!* TOP TIP* Drain into a colander and let the steam completely disappear before putting them into the oven to get the crispiest wedges!
Once cooled, toss in the veg oil and Cornish Sea Salt Really Garlicky and roast in the oven for roughly 40 mins or until golden brown and crispy.
Remove from the oven, finish with a bit more Cornish Sea Salt Really Garlicky and dig in!
To go really garlicky, make some garlic mayo to dip your wedges into… combine a small bowl of mayo with a good pinch of Really Garlicky Sea Salt and mix well.
