With the wild garlic just beginning to peep up this spring, we thought you might enjoy these tasty potatoes with a wild garlic mayo dip. They’d be great with a homemade burger!! They are really easy to make, and you could always experiment with different spices. They’d be great with Indian spices, or smoky fajita flavours.
Ingredients: (serves 4)
For the potatoes:
- 4 x medium/large potatoes, cut into half inch dice
- 2 tbsp oil (sunflower or vegetable oil would be best)
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp sea salt
- Pinch black pepper
For the mayo:
- 4 tbsp mayonnaise
- 5-6 wild garlic leaves, or a small handful of chives/garlic chives, finely chopped
Method:
- Pre-heat oven to 220c
- Toss the cubed potatoes with the oil and spices and seasoning until thoroughly coated
- Put the potatoes in a roasting pan and into the oven for approx 45 minutes until golden and crunchy (give the roasting pan a shake after 20 mins)
- Mix the mayonnaise and garlic leaves in a bowl
- Serve the potatoes with the mayo, and enjoy!
