Smoky Spiced Potatoes with Wild Garlic Mayo

With the wild garlic just beginning to peep up this spring, we thought you might enjoy these tasty potatoes with a wild garlic mayo dip. They’d be great with a homemade burger!! They are really easy to make, and you could always experiment with different spices. They’d be great with Indian spices, or smoky fajita flavours.

Ingredients: (serves 4)

For the potatoes:

  • 4 x medium/large potatoes, cut into half inch dice
  • 2 tbsp oil (sunflower or vegetable oil would be best)
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 1 tsp sea salt
  • Pinch black pepper

For the mayo:

  • 4 tbsp mayonnaise
  • 5-6 wild garlic leaves, or a small handful of chives/garlic chives, finely chopped

Method:

  1. Pre-heat oven to 220c
  2. Toss the cubed potatoes with the oil and spices and seasoning until thoroughly coated
  3. Put the potatoes in a roasting pan and into the oven for approx 45 minutes until golden and crunchy (give the roasting pan a shake after 20 mins)
  4. Mix the mayonnaise and garlic leaves in a bowl
  5. Serve the potatoes with the mayo, and enjoy!
