These would be great with a homemade burger!! They are really easy to make, popular with all ages, and they make a nice change from chunky chips or potato wedges. This recipe includes a wild garlic mayo which you can keep up your sleeve until the wild garlic comes out in a few weeks, otherwise, you can use a pinch of Garlicky Sea Salt from Cornish Sea Salt which is available from most supermarkets, or online.
Ingredients: (serves 4)
For the potatoes:
- 4 x medium/large potatoes, cut into half inch dice
- 2 tbsp oil (sunflower or vegetable oil would be best)
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp sea salt
- Pinch black pepper
For the mayo:
- 4 tbsp mayonnaise
- 5-6 wild garlic leaves, (or a generous pinch of Garlicky Sea Salt)
Method:
- Pre-heat oven to 220c
- Toss the cubed potatoes with the oil and spices and seasoning until thoroughly coated
- Put the potatoes in a roasting pan and into the oven for approx 45 minutes until golden and crunchy (give the roasting pan a shake after 20 mins)
- Mix the mayonnaise and garlic leaves (or garlic sea salt) in a bowl
- Serve the potatoes with the mayo, and enjoy!
