Tomato, strawberry and basil salad with Smoked Cornish Sea salt flakes
This salad is a fresh and sweet summer accompaniment to barbecues. A perfect use of seasonal summer ingredients that you can easily grow in your own garden!
Ingredients (serves 4):
- 6 Vine tomatoes
- 6 large Cornish Strawberries
- Juice of 1 lemon
- Juice of 1/2 orange
- 1 tbsp caster sugar
- 1 clove garlic, minced
- 50g basil leaves
- 4 tbsp extra virgin olive oil
- Smoked Cornish Sea salt to taste
Method
Slice the tomatoes and strawberries and arrange them on a plate in a flat layer so they soak up the seasoning and dressing evenly.
Rip the basil and place into a pestle and mortar (or food processor) and grind together with the olive oil to create a paste.
Work in the caster sugar, garlic and citrus juices to finish the dressing – adjusting the balance of acidity and sweetness to taste.
Dress the salad with the zesty herb oil and garnish with a handful of small picked basil leaves.
Finish with a generous sprinkling of smoked Cornish Sea Salt flakes.
