Sometimes you just need a dish that you can load up with veggies, and paella is a great option for doing just that! The added beauty is that it’s a one pot dish and quick to prepare.
Ingredients (serves 4)
- 1 medium onion, diced
- 5-6 cloves garlic, crushed
- 1 green pepper, diced
- 2 medium tomatoes, chopped
- 1 tsp smoked paprika
- 2 cups paella rice
- 800ml veg stock
- As many veggies as you need to use up, chopped/sliced as you see fit!
- 1 handful chopped parsley
- 1 lemon
- Sea salt
Method
In a paella pan or large, fairly deep non-stick frying pan, heat some olive oil and gently cook the onion, peppers and garlic on a medium heat until they soften.
Add the tomatoes and paprika and stir well. Let the tomatoes soften a bit before adding the paella rice. Stir the rice in to coat it with all the lovely flavours, then add the stock until the rice is well covered. You may need to top it up with more stock later if it boils dry.
Simmer on a medium-low heat for 10 mins before adding the rest of the veggies. Check that there is enough liquid and top up with more stock if necessary. Keep cooking until the rice is cooked.
When you are ready to serve, squeeze in some lemon juice, season with sea salt and sprinkle with parsley.
