Make the piggies veggie this Christmas! You could use beetroot strips instead of the carrot as well. A peeler or mandolin work well for slicing them nice and thin (but watch out for your fingers…)
Ingredients
- 1-2 carrots, cut into very thin strips
- Pack of halloumi, cut into 1cm batons
- 1 tbsp soy sauce
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- pinch black pepper
Method
- Make a marinade by mixing together the balsamic, soy and olive oil
- Soak the carrot strips in the marinade for 10-15mins. Mix occasionally.
- Pre-heat oven to 200c
- Wrap halloumi in veg strips (1 or 2 strips per baton is fine)
- Bake in the oven for 20-25 mins until halloumi turns golden
