Veggie Pigs in Blankets

Make the piggies veggie this Christmas! You could use beetroot strips instead of the carrot as well. A peeler or mandolin work well for slicing them nice and thin (but watch out for your fingers…)


  • 1-2 carrots, cut into very thin strips
  • Pack of halloumi, cut into 1cm batons
  • 1 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • pinch black pepper



  • Make a marinade by mixing together the balsamic, soy and olive oil
  • Soak the carrot strips in the marinade for 10-15mins. Mix occasionally.
  • Pre-heat oven to 200c
  • Wrap halloumi in veg strips (1 or 2 strips per baton is fine)
  • Bake in the oven for 20-25 mins until halloumi turns golden
