Ditch the sliced carrots and steamed broccoli and make way for a beautiful dish of greens that’ll wow whoever is at your table…
Ingredients: (serves 4-6 as a side)
- Any combination of the following (enough altogether to fill a large, deep frying pan)
- Spinach/Chard/Kale (chopped)
- Leeks (shredded)
- Sprouts (shredded)
- Purple Sprouting Broccoli florets
- 3-4 cloves garlic, crushed
- Juice of half an orange
- Sea salt and pepper
- Olive oil
- Toasted pumpkin seeds/flaked almonds/pine nuts (optional)
Method
- On a medium high heat, warm the olive oil in a large frying pan or wok
- Add the garlic and fry for 1 minute
- Add all your veggies and stir fry for 3-4 minutes until just cooked through
- Remove from the heat, mix in the orange juice and season well with salt and pepper.
- Add the toasted nuts/seeds, mix together and serve.
