Amazingly quick and yummy mixed greens

This is such an easy way to use up lots of leaves and other greens, but the best bit about it is that it’ll have everyone wanting more as the flavours really come through brilliantly.

As the basis of the dish, use any combination of the following veggies:

  • Kale
  • Spinach
  • Chard
  • Mustard Leaves
  • Sugarsnap Peas/Mangetout/Peas

Ingredients (serves 4 as a side dish):

  • 4-5 Handfuls Mixed Greens (chopped)
  • 5-6 Garlic Cloves (crushed)
  • 1 Chilli (chopped)
  • 1 Lime/Lemon
  • 1 handful fresh, leafy herbs (coriander and parsley work well)
  • Olive Oil
  • Sea Salt

Method:

In a frying pan or skillet, heat a splash of olive oil and gently cook the garlic for 1-2 minutes before adding the mixed greens and chilli. Stir-fry until the greens wilt down then take off the heat. Squeeze over the lemon or lime, stir in the fresh herbs (keep some back to sprinkle over the top) and season with sea salt.

Variations:

Spice it up by cooking 1 teaspoon of cumin seeds in the oil for a minute before adding the crushed garlic along with a teaspoon of turmeric and a teaspoon of crushed ginger. Then add your greens and cook for 3-4 mins before adding a teaspoon of coriander and your fresh coriander. Squeeze some lime over the top before serving.
