Any leftovers can be used in this recipe – roast potatoes or parsnips, leftover sprouts – you could even put stuffing in there. A good start to Boxing Day!
Ingredients:
Whatever leftovers you have:
- Roasted veggies, eg: potatoes/parsnips/carrots/celeriac
- Cooked brussels sprouts and any other greens
- Pigs in blanket – veggie or meat
- Stuffing
And 1 to 2 eggs per person
Method:
- Lightly mash your leftover roasted veggies.
- Finely slice your cooked sprouts/cabbage/kale and mix in.
- Chop up any pigs in blanket or stuffing and mix into the hash.
- Divide hash mixture into portions and mould into individual patties.
- Bring a large pan of water to the boil (for the eggs) & add a dash of white vinegar.
- Add 2 tbsp olive oil to a non-stick frying pan and warm on a medium heat.
- Fry the patties for 3-4 minutes until golden brown. Then flip and cook for a further 3-4 minutes.
- When you flip the hash patties, break the eggs into the pan of water to poach for 4-5 mins.
- Use a spatula to place the breakfast hash patties onto plates, then top with a poached egg.
