The best onion gravy (v)

Make a hearty meat-free gravy for your Christmas dinner…this recipe is SO good!


Ingredients (serves 4-6)

  • 2 large onions, sliced
  • 1tbsp olive oil
  • 500ml water/veg stock
  • 1 veg stock cube
  • 1 tbsp plain flour
  • 2 tsp soy sauce
  • 2 tsp marmite
  • 1 tsp cranberry sauce/redcurrant jelly
  • 1 tsp balsamic vinegar
  • sea salt



  1. Warm the olive oil in a pan on a medium heat
  2. Add the onions and a pinch of sea salt. Stir well and fry for 5 mins until they start to turn translucent.
  3. Add the flour and stir to coat the onions well.
  4. Add the stock/water gradually and keep mixing well so that it doesn’t get lumpy.
  5. Crumble in the stock cube, add the soy sauce, marmite, cranberry sauce & balsamic.
  6. Stir well & bring to the boil to thicken. If you need to loosen it slightly, just add a little water.
