Tzatziki Recipe Ideas

Tzatziki is an excellent way of using a glut of cucumbers or courgettes. You can play around with it a little, trying different herbs – Mint is the classic, and you can try using different types, like Chocolate Mint and Ginger Mint, and Vietnamese Coriander works really well too.

Ingredients

  • 1 small cucumber or courgette, grated
  • 2-3 tbsp natural yoghurt
  • 1 tbsp mint or vietnamese coriander leaves, chopped
  • drizzle of olive oil
  • pinch of sea salt
  • Squeeze of lemon (optional)

Method

  1. Mix the courgette/cucumber with the yoghurt, herbs and sea salt and lemon juice
  2. Dress with a drizzle of olive oil
  3. Serve immediately

Top tips:

Add more herbs for more flavour, or a smaller amount for a more cooling tzatziki.

Tzatziki can go quite watery, so it is best made just before you are going to serve it.
